Chinese. 研究了壳聚糖及其衍生物对绿豆芽产量及品质的影响。结果表明,所有的壳聚糖及其衍生物不仅可以增加绿豆芽产量,而且可以提高绿豆芽的品质。其中壳聚糖谷氨酸盐表现最佳。在使用浓度为0.05%,浸种时间为8h时,总产量增加10%以上,Vc含量提高61.93%,且硬度、茎粗和茎长也有不同程度的增加。
