Technology of production of rye-wheat bread on the basis of enriched starter | Технология производства ржано-пшеничного хлеба на основе обогащенной закваски

English. Traditional rye-wheat bread is made from flour, water and yeast. To add special properties, use additional raw materials. The purpose of the research: development of modern technology for the production of bakery products with improved organoleptic and physicochemical characteristics enriched with natural biologically active substances. It is proposed to use flax seed infusion (FSI) in a traditional rye-wheat bread recipe and a thick rye ferment made on the basis of lactic acid bacteria (LAB). It is scientifically justified to apply the FSI as a component of prebiotic action in the rye ferment for LAB Lactobacillus brevis ssp., Lactobacillus plantarum ssp. For the study, samples of leaven were prepared on pure cultures of LAB (control); with spontaneous fermentation; on lactic acid bacteria with FSI; on the LAB with a linseed additive. Due to the presence of water-soluble polysaccharides, water-soluble albumins, vitamins, minerals in the FSI, biotechnological processes are activated during the ripening of thick rye starter in the production cycle, while fermentation is accelerated, thereby intensifying the whole technological cycle of bread production. It is established that the FSI influences the baking properties of wheat flour (with an increase in its concentration, a positive effect on the physical properties of gluten is noted). It is shown that the FSI has a positive effect on the organoleptic and physicochemical parameters of the bread. The recommended ratio of the FSI is 70:30-100:0 based on the weight of wheat flour. On the basis of the organoleptic evaluation, the shelf life of the experimental bread (with full replacement of water with FSI) when storing in a polyethylene film at the room temperature is set to be 72 h (of the ordinary one – 24 h).

Russian. Традиционно ржано-пшеничный хлеб производят из муки, воды и дрожжей. Для придания особых свойств используют дополнительное сырье. Цель исследования: разработка современной технологии производства хлебобулочных изделий с улучшенными органолептическими и физико-химическими характеристиками, обогащенных природными биологически активными веществами. В традиционной рецептуре ржано-пшеничного хлеба предложено использовать настой семян льна (НСЛ) и густую ржаную закваску, полученную на основе молочнокислых бактерий (МКБ). Научно обосновано применение НСЛ в качестве компонента пребиотического действия в составе ржаной закваски для МКБ Lactobacillus brevis ssp., Lactobacillus plantarum ssp. Для исследования готовили образцы закваски на чистых культурах МКБ (контроль); со спонтанным брожением; на молочнокислых бактериях (МКБ) с НСЛ; на МКБ с льняной добавкой. Благодаря присутствию в НСЛ водорастворимых полисахаридов, водорастворимых альбуминов, витаминов, минеральных веществ активизируются биотехнологические процессы при созревании густой ржаной закваски в производственном цикле, при этом ускоряется брожение, тем самым интенсифицируется весь технологический цикл производства хлеба. Установлено, что НСЛ влияет на хлебопекарные свойства пшеничной муки (с увеличением его концентрации отмечается положительное действие на физические свойства клейковины). Показано, что НСЛ положительно влияет на органолептические и физико-химические показатели хлеба. Рекомендуемое соотношение НСЛ – 70:30-100:0 от массы пшеничной муки. На основании органолептической оценки установлен срок годности экспериментального хлеба (с полной заменой воды на НСЛ) при хранении в полиэтиленовой пленке при комнатной температуре – 72 ч (у обычного – 24 ч).
