The protective role of the trehalosa in the bakery yeast

The effect of some stress factors as heat shock, cooling, and high ethanol concentration on yeast biomass at different growth stages was investigated. It was registered that changes in intracellular trehalose content are closely related with stress factors present, because of which it can be used as an indicator for bakar's yeast stress.
