Alemán. An 7 Stellen des Schlachtprozesses wurde an 5 Tagen in einem zweistuendigen Intervall die Gesamtkeimzahl bei Schlachtkoerpern bestimmt. Die Keimzahl reflektierte die technikabhaengigen Einfluesse und war darueber hinaus uhrzeitenbedingt. Erfolgversprechende Massnahmen fuer eine Reduktion der Keime sind in den vorderen Produktionsphasen (Entbluten, Bruehen, Rupfen) anzusetzen.
