Sweet corn of the variety Thai Supersweet is consumed fresh, and very little utilized by the canning industry. The possibility of utilizing the sweet corn for canning was studied. Two types of products namely whole kernels which is brine and cream-style corn were developed and were found to be organoleptically acceptable. This paper also outlines the salient points in quality control.
