Removal of SO2 from wine material for distillation

An easily applicable production conditions method for desulphiting with CaCO3 of wine materials for distillation was elaborated. The relationship between SO2 content and pH in the distillate was investigated. The role of the pH in the desulphiting process was outlined. The produced distillate is with better degustation qualities compared to nonsulphited.
