The article informs on results of the comprehensive study of dynamics of variation of physical and chemi- cal properties of the multicomponent composition of brines dependently of the variable external factors. It was developed the composition of multicomponent brine character by the pronounced antioxidant properties, which influence positively on parameters of quality of finished products
