Reclaimed water and food production: Cautionary tales from consumer research Полный текст

Reclaimed water has been identified as a viable and cost-effective solution to water shortages impacting agricultural production. However, lack of consumer acceptance for foods irrigated with reclaimed and treated water remains one of the greatest hurdles for widespread farm-level adoption. Using survey data from 760 participants in the mid-Atlantic region of the U.S., this paper examines consumer preferences for six sources of reclaimed irrigation water and identifies statistically significant relationships between consumers’ demographic characteristics and their preferences for each type of reclaimed water. Key findings suggest that adult consumers prefer rain water to all other sources of reclaimed water. Women are less likely than men to prefer reclaimed irrigation water sources and are particularly concerned about the use of black and brackish water. Consumers who had heard about reclaimed water before are more likely to accept its use. Drawing on evidence from survey and experimental research, this paper also identifies disgust, neophobia and safety concerns as the key issues that lead consumers to accept or reject foods produced with reclaimed water. Finally, we identify avenues for future research into public acceptance of reclaimed water based on our analysis and evidence from prior research.

This chapter focuses on the multiple facets and meanings of water and how it is a contested resource. It also explores linkages between SDG 6 (Clean water and sanitation) and SDG 2 (Zero hunger). Water is essential for all life and integral to the functioning of food systems; similarly, changes in our food systems are essential to achieve SDG 6. And improvements in both are needed to reduce inequities in resources and achievements. As an example, land, food and water rights often go hand in hand, and are marked by gender, caste, racial and other exclusions. The chapter highlights how accessing water for food security can be challenging for smallholders and for vulnerable and marginalized women and men, and how water allocation systems, privatization and reform processes can affect local people’s rights to water, land and food. It argues for the need to improve policy coherence across water, land and food, and concludes by making a case for strengthening the relationship between the human right to water and food, especially for marginalized women and men.

The current global developments have the potential to cause a ‘perfect storm’ at the core of the Anthropocene: the Food-Energy-Water-Nexus. To discuss the ethical consequences of these developments, i.e., insufficient access to the life sustaining nexus resources, the analysis is focused on Rawls' theory of justice and its implementation in Germany with a special focus on the FEW nexus. Rawls stresses in his theory of justice the prominent meaning of institutions for a fair society to meet societal challenges and to meet the challenge of our time: a stable and just society.Hence, the realization of his ideas in Germany is scrutinized and income tax and value added tax are interpreted in the sense of Douglas North and John Rawls as institutions and formal rules of society. This paper focuses on taxes as the most important institutional incentive to organize and structure the political, social and economic cooperation and analyses how these incentives affect selected German households (all households, singles, single man and woman, and couples) with respect to income and FEW expenditures.The relevant income and usage data sample (Einkommens- und Verbrauchsstichprobe (EVS)) for Germany is used for the analysis of the distribution of income types, FEW expenditures and the revenues of income tax and value added tax, i.e., the main instruments to manage the challenges of the FEW nexus. Therefore two distribution measures have been used: the dispersion of income, taxes and FEW expenditures and their skewness. Five household groups were selected for this analysis: All households, all single households, the single women households, the single men households, as well as the households of couples. The EVS data sample allows the analysis of consequences of the current societal conditions on the various households and thus serves to provide a deeper understanding of the differences between singles and couples but also between single women and men.

More and more people in Bangladesh have recently become aware of the risk of drinking arsenic-contaminated groundwater, and have been trying to obtain drinking water from less arsenic-contaminated sources. In this study, arsenic intakes of 18 families living in one block of a rural village in an arsenic-affected district of Bangladesh were evaluated to investigate their actual arsenic intake via food, including from cooking water, and to estimate the contribution of each food category and of drinking water to the total arsenic intake. Water consumption rates were estimated by the self-reporting method. The mean drinking water intake was estimated as about 3 L/d without gender difference. Arsenic intakes from food were evaluated by the duplicate portion sampling method. The duplicated foods from each family were divided into four categories (cooked rice, solid food, cereals for breakfast, and liquid food), and the arsenic concentrations of each food category and of the drinking water were measured. The mean arsenic intake from water and food by all 18 respondents was 0.15 ± 0.11 mg/d (range, 0.043 - 0.49), that by male subjects was 0.18 ± 0.13 mg/d (n = 12) and that by female subjects was 0.096 ± 0.007 mg/d (n = 6). The average contributions to the total arsenic intake were, from drinking water, 13%; liquid food, 4.4%; cooked rice, 56%; solid food, 11%; and cereals, 16%. Arsenic intake via drinking water was not high despite the highly contaminated groundwater in the survey area because many families had changed their drinking water sources to less-contaminated ones. Instead, cooked rice contributed most to the daily arsenic intake. Use of contaminated water for cooking by several families was suspected based on comparisons of arsenic concentrations between drinking water and liquid food, and between rice before and after cooking. Detailed investigation suggested that six households used contaminated water for cooking but not drinking, leading to an increase of arsenic intake via arsenic-contaminated cooking water.

Two web-based dietary assessment tools have been developed for use in large-scale studies: the Riksmaten method (4-d food record) and MiniMeal-Q (food-frequency method). The aim of the present study was to examine the ability of these methods to capture energy intake against objectively measured total energy expenditure (TEE) with the doubly labelled water technique (TEEDLW), and to compare reported energy and macronutrient intake. This study was conducted within the pilot study of the Swedish CArdioPulmonary bioImage Study (SCAPIS), which included 1111 randomly selected men and women aged 50–64 years from the Gothenburg general population. Of these, 200 were enrolled in the SCAPIS diet substudy. TEEDLW was measured in a subsample (n 40). Compared with TEEDLW, both methods underestimated energy intake: −2·5 (sd 2·9) MJ with the Riksmaten method; −2·3 (sd 3·6) MJ with MiniMeal-Q. Mean reporting accuracy was 80 and 82 %, respectively. The correlation between reported energy intake and TEEDLW was r 0·4 for the Riksmaten method (P < 0·05) and r 0·28 (non-significant) for MiniMeal-Q. Women reported similar average intake of energy and macronutrients in both methods whereas men reported higher intakes with the Riksmaten method. Energy-adjusted correlations ranged from 0·14 (polyunsaturated fat) to 0·77 (alcohol). Bland–Altman plots showed acceptable agreement for energy and energy-adjusted protein and carbohydrate intake, whereas the agreement for fat intake was poorer. According to energy intake data, both methods displayed similar precision on energy intake reporting. However, MiniMeal-Q was less successful in ranking individuals than the Riksmaten method. The development of methods to achieve limited under-reporting is a major challenge for future research.

The mobile Food Record (mFR) is an image-based dietary assessment method for mobile devices. The study primary aim was to test the accuracy of the mFR by comparing reported energy intake (rEI) to total energy expenditure (TEE) using the doubly labeled water (DLW) method. Usability of the mFR was assessed by questionnaires before and after the study. Participants were 45 community dwelling men and women, 21–65 years. They were provided pack-out meals and snacks and encouraged to supplement with usual foods and beverages not provided. After being dosed with DLW, participants were instructed to record all eating occasions over a 7.5 days period using the mFR. Three trained analysts estimated rEI from the images sent to a secure server. rEI and TEE correlated significantly (Spearman correlation coefficient of 0.58, p < 0.0001). The mean percentage of underreporting below the lower 95% confidence interval of the ratio of rEI to TEE was 12% for men (standard deviation (SD) ± 11%) and 10% for women (SD ± 10%). The results demonstrate the accuracy of the mFR is comparable to traditional dietary records and other image-based methods. No systematic biases could be found. The mFR was received well by the participants and usability was rated as easy.

Accurate assessments of a target population’s energy intake (EI) are essential to prevent poor nutritional status. However, self-reported dietary records (DRs) or food frequency questionnaires (FFQs) are not always accurate, thereby requiring validation and calibration studies. This study aimed to validate the EI estimated by a FFQ using the doubly labeled water (DLW) method. Participants were 109 Japanese older adults (50 women and 59 men) aged 65–88 years. The EI was obtained by a DR and 47-item FFQ over 1 year. The total energy expenditure (TEE) was measured by DLW for ~2 weeks. EI was significantly lower than TEE (p < 0.01); ratios of EI assessed by DR and FFQ against TEE were 0.91 ± 0.17 and 0.82 ± 0.22, respectively. TEE was significantly and moderately correlated with the EI estimated by the DR (r = 0.45, p < 0.01) and FFQ (r = 0.37, p < 0.01). Furthermore, the EI correlation coefficients estimated by DR and the FFQ in this study were not significantly different (p = 0.46). The EI/TEE ratio was significantly and negatively correlated with the body mass index (BMI). In conclusion, EI estimated with a DR or FFQ modestly correlated with TEE, and calibrating EI with a developed equation in this study can attenuate the underestimation of EI.

The high intake of dietary sodium (Na⁺) has been associated with obesity and insulin resistance, sparking the hypothesis that the consumption of salty foods affects food intake (FI) and postprandial blood glucose (BG) response. Therefore, we conducted 2 randomized repeated-measures experiments to examine the acute effects of the Na⁺ content of solid food and beverage on FI, water intake (WI), subjective appetite, thirst, and BG. FI and WI were measured at ad libitum pizza test meals; appetite, thirst, and BG were measured at baseline and at regular intervals before and after meals. In the first experiment, 16 males (mean body mass index (BMI), 22.2 kg·m⁻²) consumed a low-Na⁺ (71 mg) bean preload (300 kcal) with or without 740 mg or 1480 mg of added Na⁺ 120 min prior to the pizza meal. Participants ate 116 kcal more at the test meal after consuming beans with 740 mg of added Na⁺ than after beans with 1480 mg of added Na⁺. In the second experiment, 19 males (mean BMI, 23.2 kg·m⁻²) consumed a low-Na⁺ (62 mg) tomato beverage (73 kcal) with or without 500, 1000, 1500, or 2000 mg of added Na⁺ 30 min prior to a pizza meal. The beverage with 2000 mg of added Na⁺ led to higher WI during the pizza meal than the beverage with 500 mg of added Na⁺. However, compared with the control conditions (no added Na⁺), added Na⁺ treatments had no effect on dependent measures in either experiment. In conclusion, the acute intake of Na⁺, in a solid or liquid form, did not affect short-term subjective ratings of appetite or thirst, ad libitum FI or WI, or BG in healthy young men.

The usefulness of replacement of caloric sugars by low-calorie sweeteners (LCS) for weight management has been questioned on the grounds that the uncoupling of LCS sweet taste and dietary energy may confuse physiological mechanisms, leading potentially to higher energy and sugar intake. The aim of the present study was to determine whether LCS beverages compared to water, when consumed with meals, differ in their effects on energy and food intake in acute trials and after long-term habituation. Ad libitum food intake of 166 (80 women; 86 men) healthy non-obese adults (BMI between 19 and 28 kg/m2), infrequent consumers of LCS was measured in four 2-consecutive-day testing sessions (Day 1 in the laboratory, Day 2 free-living). During the first 3 sessions, held one-week apart, participants were required to drink either water or commercial non-carbonated LCS lemonade (330 ml) with their main meals (randomised cross-over design). On Day 1, motivational ratings were obtained using visual analogue scales and ad libitum food intakes (amounts and types of foods selected) were measured using the plate waste method. On Day 2, participants reported their ad libitum intakes using a food diary. After Session 3, participants were randomly assigned to the LCS habituation group or to the water control group. The habituation (660 ml LCS lemonade daily vs 660 ml water) lasted 5 weeks. The fourth and final test session measured food intakes and motivational ratings after habituation. Water and LCS beverage did not differ in their effects on total energy intake, macronutrient intakes or the selection of sweet foods and on motivational ratings. Similar results were obtained in both LCS-naïve and LCS-habituated individuals.
