36 lambs from the breeds Merino Branco (12), Serra da Estrela (12) and Campanica (12) were slaughtered along different weights, from 18 to 40 kg. Samples of the muscle longissimus dorsi were submited to sensorial analysis. No significative differences (P0.05) were found amoung the breeds and the slaughter weights for tenderness, juiceness and flavour
