Enzymatic hydrolysis as a process influent of changing immunoreactive properties of sodium caseinate

The aim of the work was to determine the effect of enzymatic hydrolysis of sodium caseinate with Subtilisina carlsberg - Alcalase 2,4 L FG (Novo Nordisk) and papain - EC 3.4.22.2 (Sigma) on immunoactivity. The complex of analytical immunometric methods were applied with the use of polyclonal antibodies. The most beneficial effect was achieved during "two-step" hydrolysis (alcalase-papain) of sodium caseinate but it was impossible to achieve total reduction of immunoreactivity
