This study offers a brief survey of the literature dealing with microbiological oecology of sound or sliced fruits and vegetables in Modified Atmosphere Packaging (MAP) as well as their trade in Europe. The author autlines the requirements of the MAP technologies as regards the desirable balanced gas composition and the permeability features of the MAP packaging materials.
