英语. This study was conducted to determine the effects of clarification and pasteurization on the antioxidant activity and total phenolic content of pomegranate juice. Moreover, the changes in antioxidant activity and total phenolic content of pomegranate juice concentrates were also monitored during storage at 5°C, 12°C and 20°C for a period of 8 months.

Ayrıca 5°C, 12°C ve 20°C sıcaklıklarda 8 ay depolama süresince, nar suyu konsantrelerinin antioksidan aktivite ve toplam fenolik madde içeriğindeki değişimler de gözlenmiştir.
