Extract: Human milk samples were divided at collection and stored at -70 degrees C or -20 degrees C (or extracted immediately with organic solvent) to compare lipid class composition. Storage at -20 degrees C was not satisfactory for maintaining milk lipid composition, since it resulted in hydrolysis of triglycerides and the appearance of free fatty acids. (author)
