The conditions of pickle workshops in Bursa province and the determination of quality characteristics of pickles

In this research study, 46 different samples collected from 14 different pickle workshops in Bursa province. Final quality of the products are in desired level in good manufacturing practice workshops as a consequence of physical, chemical and sensory analysis when the conditions and production techniques of the workshops are taken into account
