DEUTSCH: Der Beitrag erlaeutert die Eigenschaften der aus verschiedenen Rohstoffen gewonnenen nativen Staerken und geht auf die Modifizierungsmoeglichkeiten und die Anwendungsgebiete modifizierter Staerken ein. Durch unterschiedliche Modifizierungsarten lassen sich Spezialstaerken herstellen, die fuer bestimmte Produkte "massgeschneidert", gezielte Produkteigenschaften wie Konsistenz, Textur, Stabilitaet etc. verbessern.
