Durch Reaktion von Phosphorylase mit D-Glucal und anorganischem Phosphat anstelle des natuerlichen Substrates Alpha-D-Glucose-1-Phosphat wurden neuartige 2-Desoxy-maltooligosaccharide hergestellt. Ihre Eigenschaften und die Charakterisierung durch NMR-Spektroskopie, Massenspektrometrie und HPLC werden beschrieben.
