International and national requirements to the food and beer safety

The article treats some international and national requirement to the food and beer safety. There are presented the principles of the hazard analysis and critical control point system (HACCP) and guidelines for its application in brewing industry. The indispensable condition for foods and beverages safety and wholesomeness is the elaboration and application of the HACCP system in the food industry.
