The physocochemical characteristics (viscosity, water solubility, water absorption) of extruded corn starches of previously changed native characteristics, were investigated. These non - standard starches of different amylopectin content (mixtures of normal / waxy corn starches) or previously modified (oxydized; phosphate esterified) treated by extrusion modification result new products with very different characteristics versus non - extruded corn starch.
