Bioactive peptides from food proteins

Some characteristics of bioactive peptides derived from food proteins will be presented. The structure of these peptides defines whether they can be bound to specific receptors, inhibit certain enzymes, prevent microbial growth, complex divalent cations or have immunomodulatory and cytomodulatory activity. Products classified as functional foods can be prepared by the addition of bioactive peptides and careful treatment of certain foods prior to the consumption.
