DEUTSCH: Berichtet wird ueber die Eigenschaften einer konzentrierten resistenten Staerke mit der Bezeichnung Novelose, die fuer die Ballaststoffanreicherung von Lebensmitteln gut geeignet ist und zur Verbesserung der Textur und der Verarbeitungseigenschaften beitragen kann. Es wird ein Vergleich des relativen Wasserbindungsvermoegens von Novelose zu anderen handelsueblichen Ballaststoffen gezeigt. Novelose bindet erheblich weniger Wasser als andere Ballaststoffe. Auf den Einsatz von Novelose in Fruehstueckscerealien wird besonders eingegangen.
