DEUTSCH: Enpfehlungen fuer die Herstellung von Vollkornbroten werden gegeben, wobei der Einsatz von Brueh- und Quellstuecken zur Erzielung einer guten Brotqualitaet besonders herausgestellt wird. Rezepte fuer ein feines Roggenvollkornbrot und ein grobes Vollkornbrot mit ausfuehrlichen Teigfuehrungsempfehlungen werden mitgeteilt.
