DEUTSCH: Nach allgemeinen Ausfuehrungen ueber Methoden zum Frosten von Teiglingen wird auf die Verwendung von kryogenen Kaeltemitteln wie Stickstoff und Kohlendioxid besonders eingegangen. Die Arbeitsprinzipien von Stickstoff und Kohlendioxid beim Gefrierprozess werden mitgeteilt. Qualitative Aspekte und wirtschaftliche Ueberlegungen beim Einsatz der beiden Kaeltemittel werden eroertert.
