The stability of Beira Baixa monovarietal olive oils - Galega vulgar, Bical and Cordovil de Castelo Branco - is discussed for two harvests: 1997/98 and 1998/99. Results from two tests - Rancimat test and oxidative test for oil thin layers at 50øC - are brought into relation with polyunsaturated fatty acids content and polyphenols content. The latter chemical parameters varied throughout the two harvests, due to different atmospheric conditions thus affecting oil stability
